April Showers – Baby Shower Cupcakes!

Over the last several years I’ve come to realize just how lucky I am to have a wonderful family that I love and who loves me in return. I’ve realized that I am much closer to some of my family members than a lot of people are to theirs. My extended family doesn’t feel “extended” to me. I consider many of them more than just family but friends as well. I would do almost anything for these people so when I was asked to make cupcakes for my wonderful cousin’s baby shower. Well… how could I say no?

My cousin and her husband just had their first son. Baby Sammy was born just before 2pm on Friday so I figured my next RageCakes update should be with the pictures of the cupcakes I made for the baby shower in April. This is the most appropriately timed post yet! Still behind but not as behind as they have been so far. No worries though, my next update will feature nearly year old cupcakes once again.

Almost every time I make cupcakes they end up coming to work with me, and because baby Sammy’s dad is not only family, but works with me as well, he is able to try the cupcakes and bring one home for my cousin to enjoy. He even has this nifty little cupcake carrier made specifically to transport a single cupcake.

Over the last year I’ve made an interesting variety of cakes and frostings. My cousin knew exactly which cupcake she wanted for the shower. She wanted root beer cupcakes.

Other cupcakes that made it to the shower were a white chocolate chip cupcake with blackberry butter cream and a sort of half black bottom cupcake. Sammy’s dad was a fan of the black bottom cupcakes I had made once before. I however didn’t take the time to make the cream cheese filling for the cupcakes this time around and instead just put chocolate chips in the chocolate cake and topped them with cream cheese frosting and a strawberry drizzle.

One thing I will say is making cupcakes when you are sick is not something I would recommend. Diseases travel fast around my office and I managed to get sick right in time for the shower. Having to stop to wash your hands constantly  makes baking a bit of a chore. They turned out well though, and I made sure to walk out of the room whenever I needed to sneeze or cough.

I burned the bottom of the root beer cupcakes a little. I have a hard time figuring how much more or less I will need to bake cakes based on variations in ingredients. I think the carbonation in the root beer (I used both A&W root beer and root beer extract in both the cake and the frosting) makes the cake bake faster. I’ll play with it a bit and make sure to check them even earlier next time.
