April Showers – Baby Shower Cupcakes!

Over the last several years I’ve come to realize just how lucky I am to have a wonderful family that I love and who loves me in return. I’ve realized that I am much closer to some of my family members than a lot of people are to theirs. My extended family doesn’t feel “extended” to me. I consider many of them more than just family but friends as well. I would do almost anything for these people so when I was asked to make cupcakes for my wonderful cousin’s baby shower. Well… how could I say no?

My cousin and her husband just had their first son. Baby Sammy was born just before 2pm on Friday so I figured my next RageCakes update should be with the pictures of the cupcakes I made for the baby shower in April. This is the most appropriately timed post yet! Still behind but not as behind as they have been so far. No worries though, my next update will feature nearly year old cupcakes once again.

Almost every time I make cupcakes they end up coming to work with me, and because baby Sammy’s dad is not only family, but works with me as well, he is able to try the cupcakes and bring one home for my cousin to enjoy. He even has this nifty little cupcake carrier made specifically to transport a single cupcake.

Over the last year I’ve made an interesting variety of cakes and frostings. My cousin knew exactly which cupcake she wanted for the shower. She wanted root beer cupcakes.

Other cupcakes that made it to the shower were a white chocolate chip cupcake with blackberry butter cream and a sort of half black bottom cupcake. Sammy’s dad was a fan of the black bottom cupcakes I had made once before. I however didn’t take the time to make the cream cheese filling for the cupcakes this time around and instead just put chocolate chips in the chocolate cake and topped them with cream cheese frosting and a strawberry drizzle.

One thing I will say is making cupcakes when you are sick is not something I would recommend. Diseases travel fast around my office and I managed to get sick right in time for the shower. Having to stop to wash your hands constantly  makes baking a bit of a chore. They turned out well though, and I made sure to walk out of the room whenever I needed to sneeze or cough.

I burned the bottom of the root beer cupcakes a little. I have a hard time figuring how much more or less I will need to bake cakes based on variations in ingredients. I think the carbonation in the root beer (I used both A&W root beer and root beer extract in both the cake and the frosting) makes the cake bake faster. I’ll play with it a bit and make sure to check them even earlier next time.


Pop Rocks and Coke Cupcake

I’m really bad at updating. I’d make excuses, say I’ve been really busy with work, friends, family, and it would all be true. It is however also true that I’ve spent hours watching Netflix when I could have been writing something up. I actually just received my one year renewal notice on this domain. A year and this is only my second update. Yikes.

I also was yelled at the other day by my friend and coworker Katie. Consider me motivated (or bored if I’m really being honest).

So… have an update!

A little under a year ago a friend and coworker moved far away to try to find a job and life more suited to his tastes and, being the awesome person I am, I made cupcakes.

I was trying to think of something fun and clever and still a little ragey since this coworker friend was the person that came up with the name AND slogan for this thing. Only seemed fair. Well, with some help from my friend Shayna we came up with the Pop Rocks and Coke idea. I am completely aware that Pop Rocks and soda won’t actually kill anyone but the myth is what makes this cupcake so fun.

We joked that we would rather make his stomach burst so we could hide him in the closet than have him move so far away.

I did discover, to my dismay, that putting pop rocks in frosting doesn’t really work. They popped in the frosting (I’d tried to make it dry to prevent that but to no avail) and were no longer even resembling rocks by the time they made it to the office. If you are going to try the Pepsi cake topped with Pop Rock butter cream thing I’d recommend putting the pop rocks on top only, not in the frosting, and only doing it right before serving. You still want the cupcakes to pop when you eat them! Otherwise what’s the point?

I played with a few names for this one. The Gut Grenade, Tummy Tornado, Gutsplosion… Obviously my naming abilities are limited so I’m open to name suggestions!
