April Showers – Baby Shower Cupcakes!

Over the last several years I’ve come to realize just how lucky I am to have a wonderful family that I love and who loves me in return. I’ve realized that I am much closer to some of my family members than a lot of people are to theirs. My extended family doesn’t feel “extended” to me. I consider many of them more than just family but friends as well. I would do almost anything for these people so when I was asked to make cupcakes for my wonderful cousin’s baby shower. Well… how could I say no?

My cousin and her husband just had their first son. Baby Sammy was born just before 2pm on Friday so I figured my next RageCakes update should be with the pictures of the cupcakes I made for the baby shower in April. This is the most appropriately timed post yet! Still behind but not as behind as they have been so far. No worries though, my next update will feature nearly year old cupcakes once again.

Almost every time I make cupcakes they end up coming to work with me, and because baby Sammy’s dad is not only family, but works with me as well, he is able to try the cupcakes and bring one home for my cousin to enjoy. He even has this nifty little cupcake carrier made specifically to transport a single cupcake.

Over the last year I’ve made an interesting variety of cakes and frostings. My cousin knew exactly which cupcake she wanted for the shower. She wanted root beer cupcakes.

Other cupcakes that made it to the shower were a white chocolate chip cupcake with blackberry butter cream and a sort of half black bottom cupcake. Sammy’s dad was a fan of the black bottom cupcakes I had made once before. I however didn’t take the time to make the cream cheese filling for the cupcakes this time around and instead just put chocolate chips in the chocolate cake and topped them with cream cheese frosting and a strawberry drizzle.

One thing I will say is making cupcakes when you are sick is not something I would recommend. Diseases travel fast around my office and I managed to get sick right in time for the shower. Having to stop to wash your hands constantly  makes baking a bit of a chore. They turned out well though, and I made sure to walk out of the room whenever I needed to sneeze or cough.

I burned the bottom of the root beer cupcakes a little. I have a hard time figuring how much more or less I will need to bake cakes based on variations in ingredients. I think the carbonation in the root beer (I used both A&W root beer and root beer extract in both the cake and the frosting) makes the cake bake faster. I’ll play with it a bit and make sure to check them even earlier next time.

 

The Roger

Happy Halloween! Oh right… Halloween is way over. Okay how about HAPPY RAGECAKES UPDATE DAY!

I’ll let you guys take a wild guess as to when the cupcakes in this post were made. *Not so subtle hint – it was Halloween.* The post is a little overdue, as all of my posts are. These cupcakes, however, are at least mildly ragey! No small candies are being decapitated or stabbed to death, but skulls and bones are still pretty on par with my ragey ways. This is actually the first ragey cupcake to make it onto RageCakes! I’m a little ashamed.

These I affectionately call “The Roger.”

As you can see from the above picture, not only do the cupcakes have skulls, but I also have a skull that hangs out in my apartment with me. His name is Roger and he is the naming inspiration for these cupcakes. Roger has been hanging out with me for about 10 years now. I named him primarily after Roger Manganelli, the bassist for Less Than Jake, but it worked out too because of the big Jolly Roger flag I used to have hanging on my wall. Naming my skull Roger just seemed to be the right choice at that time.

These cupcakes are a white cake with white chocolate chips, topped with a pumpkin butter cream. I didn’t do a stellar job with the frosting for these. I just did straight butter cream with pumpkin whipped into it. I realized after I really should have spiced it up a little. The next time the Roger makes an appearance I’ll play some more.

I’m always on the lookout for fun sprinkles and candies to use with my cupcakes. Unfortunately “ragey” items appear rarely, so when I saw the little bone sprinkles and the skull and crossbones candies I knew I had to buy them and use them on cupcakes.
